โณ Needs time to bake

Mix the juice and the seaweed powder the night before. It must rest overnight so the bubbles go away.

Quick start

  1. Hold the dropper 2โ€“3 inches above the calcium bath.
  2. Squeeze gently, one drop at a time, about 10 drops.
  3. Wait 30 seconds, then scoop with a slotted spoon.
  4. A volunteer dips them in a rinse cup, then puts them in a small take-home cup.

Ask, instead of explaining: What happens if you drop it from higher up?

Learn: the idea

Seaweed powder (sodium alginate) mixed into juice makes it gloopy. When a drop lands in calcium water, the outside instantly turns into a jelly skin, so you get a ball with juice inside.

Prep
  • Mix juice + powder the night before.
  • Use only 2 juices. Not acidic ones.
  • Fill the calcium baths and bottles.

Crew for prep: 1 person, about 1 hr. Prep happens ahead of time: see Needs time to bake.

During the event: 3โ€“4 (2 tables) volunteers. Setup about 30 min. Busiest station; middle-schoolers are great here

Tips

  • Premix the juice and alginate the night before. It needs time to sit so the bubbles go away. Use only two juices (white grape plus one other). Avoid acidic juices like orange, lemon, pineapple, and cranberry.
  • Pre-fill the calcium baths (one bowl per seat). Reuse them all night and top them up.
  • Pre-fill the droppers or squeeze bottles. The kid's job is to drop, wait, and scoop.
  • Fixing the "gummy worm" problem: tell kids "one drop at a time, from up high." A small squeeze bottle is easier for little hands than a pipette. A tape mark on the dropper helps too. Volunteers rinse the finished pearls in plain water.
  • Run two tables, since this is the busiest station.
Safety
  • Use food-grade powders only.
  • Ask about food allergies.
  • Follow the food rules (being confirmed).
  • Wash hands and tools.
Turbo (only if we choose to)
  • Color-changing boba: make the pearls from butterfly pea flower tea (naturally blue). Kids drop them into lemonade, and they turn purple or pink, because the color changes with acid (an "acid-base indicator").
Clean up
  • Wipe the table and put reusable items in your tote.
  • Bag the trash and wash hands.
  • Log anything borrowed so it can go back.
  • Rinse the slotted spoons, bowls, and droppers.
